About My Momma:
Is it fitting to eat? My Momma would often ask us kids, as we sat around the table. It always was. My Momma was a great country cook. Even well up into old age! When most people had lost their desire to cook, my mother was right in there leading the way. She cooked for a husband, seven kids, plus farm hands. We lived on a small farm and she made stuff from scratch. Everyone of my brothers and sisters are great cooks also. They are gracious hosts and good entertainers in their homes. My mother passed this wonderful love of food and enjoying company down to us.

It's a Meatloaf day!

Ingredients:
 2 lbs Ground Beef
 1 medium Chopped onion
 1/2 cup Green and 1/2 cup of Red Pepper
 1/2 C Ketchup
 1/2 c spicy mustard
 3/4 c of Bread Crumbs
 1 lg egg
 1/2 tps dried thyme
2 tbs of brown sugar
3 tsp worcestershire sauce



The Perfect Meat Loaf!
          Mix all the above ingredients together and form into loaf and place in an appropriately sized baking pan.

          Mix part of ketchup, worcestershire sauce and sugar

Tamale Casserole!

        The ingredients:
2 lbs lean Ground Beef
1 Pkg of chili seasoning mix
2 14 oz cans Mexican style stewed tomatoes
1 pkg of Sargent's 4 cheese Mexican Blend
1 cn whole kernel corn
1-6oz pkg cornbread mix
1 cup sour cream
1 large Jalapeno Seeded and diced optional (Cooked with Ground beef)
 
          Cook Ground Beef and Drain. Combine 1/2 of cheese and all other ingredients, except sour cream and corn meal  and transfer into a lightly greased 13x9 inch baking dish. Bake in a preheated oven, at 350 degrees for 20 minutes.
Combine cornbread mix and sour cream

Home Brittle!

          Ingredients:

1 Cup of white Sugar
1/2 Cup of White corn syrup
1 cup peanuts
1/4 cup of water
2 tbs of butter, softened
1 tsp of Vanilla
1 tsp of Baking soda
1/4 Tsp of salt


          Add sugar, corn syrup, salt, vanilla, and water into heavy sauce pan and heat to boiling. Cook until sugar is dissolved, add in peanuts. Stir until candy temp reaches 300 degrees. Remove from heat and stir in

Kielbasa and Cabbage!

   

A Winter Time Favorite!

          Ingredients:
1 Small head of cabbage 2 to 3 inch chunks
1 medium onion Chopped
4 carrots chopped - stew size chunks
5 medium Potatoes - quartered
1/2 tps of garlic salt
1 lb of Kielbasa cut into 1 to 2 inch chunks
3 stalks of Celery - chopped 1" pieces
1/3 cup of parsley
3 pieces of thyme 


          Place a large pot filled approximately 2/3 full with water on the stove. Set to boil and cover. While the pot starts heating, you start your vegetable prep.
