About My Momma:

About My Momma:
Is it fitting to eat? My Momma would often ask us kids, as we sat around the table. It always was. My Momma was a great country cook. Even well up into old age! When most people had lost their desire to cook, my mother was right in there leading the way. She cooked for a husband, seven kids, plus farm hands. We lived on a small farm and she made stuff from scratch. Everyone of my brothers and sisters are great cooks also. They are gracious hosts and good entertainers in their homes. My mother passed this wonderful love of food and enjoying company down to us.

Corn Pudding! Yum Yum!

4 - 15oz cans of whole corn - Drained
4 lg eggs
1/2 cup corn meal mix
1 1/2 cup mike
6 tbs of melted butter
 2 tbs of sugar
 1/2 tsp of salt

Process 1 part of the corn and other ingredients in a blender until smooth. Stir in the remaining corn. Pour this mixture into a lightly greased 2 quart baking dish. Bake in a preheated at 350 degrees for 45 minutes until set! Crust will slightly brown.

Goes great with a Ham, or just heated or fried slices of Ham, add in Pintos with some Green Beans and Biscuits for a family meal. Have some jalapenos or Chow Chow with your pintos. Some onion slices or fresh onions from the garden. A small dish of Cottage cheese with a couple of slices of Pears or Peaches what ever you have handy, for a side dish or separate as a desert! How about some fresh, made with real lemons, lemonade with this dish.
If it's just you and the husband for the night, this dish and a big helping of Pintos are great!
