About My Momma:
Is it fitting to eat? My Momma would often ask us kids, as we sat around the table. It always was. My Momma was a great country cook. Even well up into old age! When most people had lost their desire to cook, my mother was right in there leading the way. She cooked for a husband, seven kids, plus farm hands. We lived on a small farm and she made stuff from scratch. Everyone of my brothers and sisters are great cooks also. They are gracious hosts and good entertainers in their homes. My mother passed this wonderful love of food and enjoying company down to us.

Corn Pudding! Yum Yum!

4 - 15oz cans of whole corn - Drained
4 lg eggs
1/2 cup corn meal mix
1 1/2 cup mike
6 tbs of melted butter
 2 tbs of sugar
 1/2 tsp of salt

          Process 1 part of the corn and other ingredients in a blender until smooth. Stir in the remaining corn. Pour this mixture into a lightly greased 2 quart baking dish. Bake in a preheated at 350 degrees for 45 minutes until set! Crust will slightly brown.

The Great - Coconut Cream Pie!

           Ingredients:
        
           1 Cup Sugar      1 tbs Butter
           2 tbs Flour         3 Eggs (Separate yolks and whites)
           3 cup Milk         1/4 Tsp Salt

Coconut Creme Pie!
Now that's some good eating! 
           1/2 tsp Vanilla    3/4 cup Coconut

Filling: 
          Toast the coconut.  Heat 1/2 of milk, in a medium sauce pan, add sugar gradually, then butter and flour. Heat the rest of the milk in the microwave and slowly ad some to the eggs to temper them.

Savory Green Beans!

          Great Side Dish!
         
          Ingredients:
                    3 Tbs Melted butter
                    3 tbs All purpose Flour
                    2 Cps Milk
                    1/2 lb Cheddar Cheese, Grated
                    3 cps Cooked, Drained, Green beans
                    3 Boiled Eggs, Chopped
                    1/2 Cp Chopped Onion
                   
          Combine first 3 ingredients and cook over low heat, stirring until smooth and thick. Stir 1/2 of the grated cheese into the sauce. Place beans in a shallow glass baking dish.

The Chicken Rice Casserole!

This is perfect when you won't have much time, because you can prepare it in advance.

Ingredients:

 2 cups of cut up chicken, White meat
2 cups of cooked rice
1/2 cup of slivered almonds
1 can of celery soup
1 can of Mushroom soup
4 boiled eggs Chopped
2 small onions chopped
1 cup mayonnaise
2 tsp of lemon juice
3/4 cup of diced celery
1 small pkg Potato Chips, (Crushed Optional)

          Combine all ingredients except chips.

Black Eyed Pea Cornbread!

Try it, You'll like it!  

    The Ingredients:
                           1 lb hot Sausage       
                           1 medium diced Onion
                           1 cup Cornmeal 
                           1/2 cup Flour
                           1 cup butter Milk  
                           2 cup Shredded Cheddar cheese
                           1/4 cup chopped Jalepeno Pepper
                           3/4 cup cream style Corn
                           2 lg Eggs (Lightly beaten)
                           1 can Drained Black Eyed Peas

          Cook sausage and onions in an iron skillet. At the end add in all other ingredients. Mix and pour into a greased baking pan and cook in a preheated oven at 350 degrees for 1 hour.  Serve with scrambled Eggs, and potato cakes or hash browns. Milk or Butter milk. This is a great wintertime supper.
          Also great served with a pot of pinto beans, and cabbage.

Mexican Casserole!

This is one of my favorites!
           Start out with:
              1lbs of Ground Beef (your choice)
              1 bag of Boil in the bag Rice
              1 package of cheddar cheese
              1 can of yellow corn
              1 can of Tomatoes ( my sister likes whole - I like diced so you can choose)
              1 and 1/2 Tsp Chili powder
              1 and 1/4 Tsp Garlic powder
              1 and 1/2 Tsp Salt
              1/4 Pepper

           Brown ground beef in an iron skillet and drain. Cook rice, and mix in with Ground beef, and all the rest of the ingredients. Mix in just 1/2 of the cheddar cheese.

Sweet and Sour Meatballs!

Lets eat "Home Made" Chinese Tonight!

Meatball ingredients:

1 1/2 lbs Ground Beef
2/3 cup of cracker crumbs
1/3 cup of minced onions
1 1/2 tps of salt
1 egg

          Mix all ingredients together and shape into medium size meatballs.
Brown in skillet with 1 tps of butter. Makes about 20 to 25 meatballs.

About my Momma!

          There were 7 of us kids. I was in the middle, and like most middle children I was sometimes a forgotten child. I was the Fourth of Seven, but at one point I was the oldest left at home, not going to school yet that is. I remember one day it was really storming and I couldn't go out and play. We lived on a farm and were outdoor kids. No one that I knew of stayed inside then. We would play all day long in the sun, out in the rain, whatever. We could pretty much do as we wished, as long as we did'nt leave the gates open and let the cows out. Or something equally stupid, like skinny dipping in the ponds. Which we did all the time.

Baked Ham!

This is good, as the holidays are here.
                                                                                            
Ingredients:                                                                                                                                  
10 to 12 pound ham.
1 Tbs     Mustard - Dry or Dijon
1/2 cup  Brown sugar
1/2 cup  Maple syrup
1/4 Tsp  Ginger
1/4 Tsp Cinnamon, ground
1 can of Coke Cola
Cloves are optional

          Wrap Ham in tin foil pouring some soda inside keeping it moist as it cooks. Place Ham in a large baking pan and add the rest of the can of soda. Let sit for 2 hours. Pre heat oven to 325 degrees. Cook Ham at 325 for 18 to 22 minutes per pound or to package directions. Add a little water if needed. It shouldn't. Most hams are already pre cooked, we are just heating it thoroughly for our taste.

Barbecued Ribs!

Ingredients

 1      Btl  Ketchup 14 ounces             
 2     tps  Brown sugar
 1/4  cp  water 
 1/4  cp  Vinegar
 2     tps  Dry Mustard
 1/4  cp  Tabasco Sauce
 1     tps  Chili Powder
 2     tps  Worcestershire Sauce
 1     tps  Ground Cumin
 1     tsp  Grated onion or more depending your taste
 1/4  tps  Ground Cloves
 1     tsp  Celery Salt
6      lbs  Ribs
     
          Combine first 12 ingredients to make the sauce. Set aside in the fridge. Sauce can made in advance.
          Now some people say pre boil your ribs, but I never do. The number one rule for Ribs is they must be cooked slowwwwwww. Boiling will also take away the great pork flavor. Some people wrap them in Tin foil, we don't do that either. Both methods will speed up the cooking however.
          Oven cooking is at 225 to 240 degrees, for around 5 to 6 hours

          Ingredients:
                    2 cps. Cooked chicken (Chopped)
                    2 cps, boiled eggs (chopped)
                    1/2 tps salt               
                    4 tps Mayonnaise
                    2 tps. Sugar  
                    1/4 cup slivered Almonds
                    1 cp. Celery (Chopped)
                    1/4 cp  sweet pickle relish
                    1 cp seedless grapes 
                    1 tps Grated onion

          Sprinkle Chicken with Lemon juice and seasoning,

White Bean Pot Luck!

Momma loved corn bread she fixed quite a few meals around this basic Southern staple.

Corn Bread Pot Luck!

1 lbs of dry Northern beans
5 medium size Potatoes
1 medium Onion
5 or 6 carrots (we use the real whole carrots, we like the texture, but you can use the small ones too)
As many smoked Ham Hocks as you need.  If you people from up north have never tried Ham Hocks, I ask that you to try them just this once. They are the best thing to season a pot of beans. You might develope a taste for'em. We all lov'em down here.
Salt and Pepper to taste

          Can be cooked in a large Pot on the stove or a crock pot. I prefer the crock pot myself.

Quiche!

Quiche is on todays menu!






Sounds as if some Orange juice is in order. German potatoes, and wheat toast with grape jelly makes this breakfast a hearty winner.   

Salisbury Steak!

1     medium onion
1     tsp minced Garlic
2     lbs Ground Round
1     cup of fresh mushrooms
2     large eggs lightly beaten
1/4  cup fine dry bread crumbs
2     tsp of dry mustard
2     tsp of Worcestershire sauce
2     tsp salt
1     tsp pepper

          Saute 1/2 of onion and minced garlic together. Then mix these and all above ingredients together, except mushrooms,  and shape beef patties into desired shape.
