About My Momma:

About My Momma:
Is it fitting to eat? My Momma would often ask us kids, as we sat around the table. It always was. My Momma was a great country cook. Even well up into old age! When most people had lost their desire to cook, my mother was right in there leading the way. She cooked for a husband, seven kids, plus farm hands. We lived on a small farm and she made stuff from scratch. Everyone of my brothers and sisters are great cooks also. They are gracious hosts and good entertainers in their homes. My mother passed this wonderful love of food and enjoying company down to us.

Savory Green Beans!

          Great Side Dish!

          Ingredients:
                    3 Tbs Melted butter
                    3 tbs All purpose Flour
                    2 Cps Milk
                    1/2 lb Cheddar Cheese, Grated
3 cps Cooked, Drained, Green beans
                    3 Boiled Eggs, Chopped
                    1/2 Cp Chopped Onion

Combine first 3 ingredients and cook over low heat, stirring until smooth and thick. Stir 1/2 of the grated cheese into the sauce. Place beans in a shallow glass baking dish.
Stir in eggs & onions and cover with the sauce. Sprinkle the rest of the grated cheese on top. Bake in a pre-heated oven at 400 degrees for 10 minutes or ate 350 for 15.
Goes great with other foods cooked in the oven. While your Meatloaf, or baked Chicken, is cooling, you can pop this in and it only takes another 10 or 15 minutes. Serve with White Rice and Pineapple chunks or rings. Cottage Cheese is also a great addition. Hot biscuits, and a glass of cold Milk. If your choice is meatloaf, don't forget the mushroom gravy for the meatloaf and the rice! Enjoy!
It'll be a great night to turn off the television, and play a board game with the family!
